Overview

FSANZ has assessed an application made by IFF Australia Pty Ltd (trading as Danisco Australia Pty Ltd)  to permit the use of the enzyme thermolysin (EC 3.4.24.27) as a processing aid and has prepared a draft food regulatory measure. It is proposed to be used for protein hydrolysis in the processing of dairy foods, egg, meat and fish, protein concentrates and isolates, yeast processing and in beer brewing.

FSANZ has provided public notification and welcomes your submission to assist with consideration of the application.
